Hi,

the reasons can be many.
I suggest you to investigate in kamailio proxy and kamailio lb logs (and 
maybe also sems ones) generated when the issue happened.

If possible the investigation should be done while the issue is 
happening, so you can immediately and easily determine the root case.
This will allow you to restart, if really necessary, only the single 
service that is having the issue and not the whole server.
