You can alway use a "match everything" approach. It's normal that you hav all
the destination your customers are using in your billing profile. 

Don't delete the subscribers before the accounting has been finished. You can
terminate them without deleting them.

You can always disable rating and get plain cdrs if you're not interested in
rating.
